The Gilbert Scott is owned by Marcus Wareing who takes on the role of restaurant operator here for the first time. The restaurant is located in the recently (the restaurant and hotel opened in May 2011) renovated St Pancreas hotel.

Dishes on the menu include Dorset Jugged Steak (braised featherblade with port, pork dumpings and redcurrant and Tweet kettle (sea trout with a lemon, nutmeg and herb crust).  There is a pastry bar within the restaurant where all the desserts are prepared.

The arc shaped restaurant seats 120 diners, with a 'kitchen table' seating 10 and a private dining room available to book.
