Mark Greenaway combines modern techniques with classic recipes.
Example dishes from the menu include pan roast fillet of Scottish hake served with an oxtail cannelloni, pumpkin, potato lattice, pearl barley risotto and a chive velouté; or locally reared pork belly, slow roasted for 11 hours and served with a spiced fillet of pork, pomme purée, savoy cabbage and toffee apple jus.
Mark was awarded 'rising Star Chef of the Year' from the Scottish Hotel Awards just six weeks after opening his restaurant previous restaurant, located at 12 Picardy Place where he also held three AA rosettes.
Private dining for up to twelve diners will be available from Spring 2013 in the restaurants open wine cellar located in a converted bank vault in the basement.
