Excluding Spanish restaurants, Maze was perhaps one of the first fine-dining restaurants to offer the "small plates to share" concept which is becoming increasingly popular. Guests are advised to order 3-4 plates from the menu to make up their meal. Maze also offers accompanying "wine flights" (paired food/wine tasting menus).
Food at Maze is essentially French, with some Asian influences. The menus are changed frequently, with example dishes including: jasmine and miso cured salmon, avocado, watermelon, radish and ponzu dressing; szechuan-spiced Suffolk pork belly with chilli apple, bok choy and langoustines; and boiled beef cheeks with cardamom, star anise and radish.
A part of Gordon Ramsay Holdings, Maze opened under the supervision of Jason Atherton who left in April 2010 to open his own restaurant, Pollen Street Social.
In September 2012 a sushi bar was added to the restaurant with chef Gohel Kishi in charge.
