Collin Brown has been cooking since the age of eight, turning professional at sixteen. After a spell on the Cayman Island he moved to London to learn about European cuisine and ultimately to open his own restaurant in Docklands.

Caribbean favourites such as jerk chicken and curry goat (both served with rice and peas, of course) appear on the menu alongside dishes such as braised oxtail in a scotch bonnet and thyme sauce with butter beans.
