Aulis in Cartmel is the research and development kitchen for chef Simon Rogan's restaurants. The kitchen is available for booking of up to six diners, who sit at a bar directly over looking the kitchen area where the chefs will cook their meal. This offers diners a chance to interact directly with the chefs - headed up by Dan Cox, winner of the 2008 Roux Scholarship - and learn more about how their meals are produced.
As with the other restaurants within the group, ingredients almost entirely grown by the restaurant themselves at their own organic farm or produced/foraged from the surrounding Cumbria countryside - but never from outside the UK.
Aulis is only open by prior arrangement - bookings are taken for groups of four diners and above at a price of £150 per person (including wines), or for less than four diners for £500 for the booking (Prices are subject to change, please check at time of booking).
Aulis is located next to L'Enclume.
